Red velvet cupcakes are delicious sweets prepared with the intense red dough of the traditional American Red Velvet cake.
Topped with cream cheese frosting, Greek yogurt and vanilla, these cupcakes are perfect for Valentine's Day or Mother's Day, to give as a gift or enjoy with your loved one.
The red velvet cupcakes can be baked in advance and then garnished immediately with the cream cheese, which must be firm and fluffy. You can give that extra touch by adding colored, chocolate, heart-shaped sprinkles on the cream.
Preparing them is very easy: here is the complete procedure for making perfect desserts.

Place the sugar, eggs, salt, vanilla and butter in the mixer [1].
Blend everything for a few moments until you obtain a homogeneous mixture [2].
Add the red cream to the egg cream in the mixer [5].
Also add the flour, cocoa and yeast. Blend for a few more moments [6].
You should obtain a smooth consistency, of a more or less intense red color depending on the amount of dye used [7].
Distribute the mixture into the paper cups inside a muffin mold. Fill them halfway. Bake the cupcakes at 180 degrees for about 20 minutes [8].
Take the cupcakes out of the oven and let them cool [9].
In the meantime, prepare the cream cheese by mixing the cheese, yogurt, icing sugar and vanilla in a bowl [10].
Fill a piping bag with a star nozzle and decorate the surface of the cupcakes by forming large tufts [11].
Leave one of the cupcakes without frosting, you will need it for the final decoration of all the others [12]
Crumble the remaining cupcake [13].
Use the crumbs obtained to decorate the red velvet cupcakes and also add some heart-shaped sprinkles [14].
The cupcakes will keep in the fridge for 2-3 days maximum.
Freezing is not recommended.
The cups should be filled no more than half because cupcakes, unlike muffins, must be puffy and flat, without the classic dome on the surface.
The classic red velvet cake dough includes the addition of buttermilk which, however, is not always easy to find. It is often replaced, therefore, with a mixture of milk, yogurt and lemon juice. You can frost the cupcakes with a classic butter cream or replace the Greek yogurt indicated in the recipe with mascarpone.
Instead of vanilla you can use rum or whiskey to flavor the cream.
Perfect for Valentine's day or mother's day
Although this dessert should be accompanied with a sweet liqueur, you can very well serve it at the end of the meal as a dessert, together with a wine that enhances its taste and flavour.
Always keep in mind that all desserts, not just cupcakes, should be served with sweet or sweet wines and never with dry sparkling wines or champagne.
