Panna cotta

Panna cotta is an egg-free spoon dessert made with cream, icing sugar and gelatin: originally from Piedmont, nowadays it is prepared all over the world and in many different flavours.

It's the classic dessert you can find in all restaurants: the panna cotta recipe is easy, cheap and fast!

As an alternative and delicious variant, we can mention the chocolate panna cotta or the delicious coffee one, perfect as a dessert after a meal.

A few steps for a satisfying result: t will only take 15 minutes! Just enough time to soften the jelly, squeeze it, boil the cream and combine the ingredients.

Once taken out of the cups, we decorated the panna cotta with a delicious dark chocolate ganache cream, but you can also choose strawberry or caramel sauce. In case you don't have the time, there are toppings of various flavors on the market.

Our version is a vanilla flavoured panna cotta with a chocolate topping.

Soak the gelatin in a bowl with the cold water for about 10/15 minutes [1].
Meanwhile, take a saucepan with high edges and pour the sugar and cream [2].

Cut the vanilla bean along its length and remove the seeds by scraping with the tip of a knife, then add it to the cream. [3]. Let it cook over medium heat, until it starts to boil slightly: at this point, turn off the heat and add the softened gelatin, squeezing it out of the excess water [4].

Stir with a whisk until the gelatin has completely melted, pour it into the glasses or cups [5]. The cups must have a capacity of about 3.5 oz/100 ml and must be filled almost to the brim - with our doses you get 6.

Let it cool for at least 2 hours in the refrigerator.
Let's now prepare the chocolate ganache cream: in a saucepan, mix the cream and granulated sugar, melt over a moderate flame until it almost comes to the boil. [6].

Turn off the heat and add the chopped dark chocolate [7]. We mix with a hand whisk until it is completely melted and blended: we must obtain a cream with a not too thick consistency [8]

We pour into a boule and let it cool completely at room temperature [9].
After the necessary time we can remove the cups from the refrigerator and extract the cream. This operation is very delicate because we risk breaking up the compound if we don't extract it in the right way. We immerse each cup for a few moments in a bowl with hot water, being careful not to let the water go inside [10].

We turn the mold upside down on a plate and gently extract the panna cotta trying not to break it [11]
Be careful. Now we can decorate them: transfer the chocolate ganache into a sac-à-poche or a decorative pen and pour it onto the cake as desired [12], finally complete with a little chopped hazelnuts.

    Advice, Tipps and Tricks

    To garnish it, we can prepare a fruit coulis by placing your favorite fruit (such as strawberries or raspberries) in a pan together with the sugar to obtain a sauce to pour over the dessert.

    We can garnish it with fresh berries, such as blackberries, blueberries, currants and raspberries. 

    If you don't have the vanilla bean, you can use vanilla extract.

    Those who do not have molds can prepare the panna cotta in small glasses or small glass cups, in which case it will not be necessary to remove the dessert once it has cooled.
